250g mixed dried fruit 75g dark muscovado sugar 75g butter 2 eggs 100ml brandy 100g plain flour 1 teaspoon baking powder ½ teaspoon bicarbonate of soda 1 teaspoon ground cinnamon ½ teaspoon ground ginger pinch of salt

To make the pudding: 1. Combine the dried fruit, sugar, butter, eggs and brandy in a large bowl and mix well 2. Sift in the flour, baking powder, bicarbonate of soda, cinnamon and ginger and mix again until everything is well combined 3. Spoon the mixture into a greased 900g loaf tin 4. Cover with foil and steam for 3 hours or bake in a preheated oven at 160C/140C fan/Gas Mark 3 for 5 hours 5.
